- Chop the garlic and sauté in a frying pan with oil.
- When it starts to turn golden brown, add the lime zest, and the chopped mint and coriander. Sprinkle with wine, the juice of a lime and a little water, let it reduce and add salt.
- On a hot griddle with a little oil, cook the Sea Bass fillets for three minutes on the skin side, add the wine and lime reduction and cook the fillets on the skin side for two minutes.
- Garnish the fillets with two slices of lime and raw aromatic herbs. It can be served with tomato sauce if desired.
