AVRAMAR SEA BREAM FILLET WITH CRISPY PARMESAN PESTO

Ingredients

  • 2 Sea Bream fillets of 120 g each
  • 2 teaspoons of pesto (oil, basil, parmesan and pine nuts)
  • ½ cup of thick bread crumbs
  • 1 spoonful of chopped parsley
  • 2 tablespoons of grated parmesan
  • 1 clove of chopped garlic
  • 1 tablespoon of olive oil
  • Salt and pepper

Method

(2 servings)
Cooking time: 15 min

  1. Preheat oven to 200ºC.
  2. Season the fillets with salt and pepper and spread the pesto over the fish.
  3. Mix the bread crumbs with cheese, parsley, oil and a pinch of salt.
  4. Press this mixture over each fillet, so that it sticks to the pesto.
  5. Cook the fillets on the stove top, in an oven-proof casserole dish (preferably non-stick) for one and a half minutes on high heat.
  6. Place in the oven for 5 min approx. (until golden) and serve immediately.
